Laura Chesshir 4/05/2023 8:49 AMI have a whole pinterest board of vegan/vegetarian recipies that I've just been itching to try, but never really had a reason. Now I've tried 2 in one day! The best one that I made was the meatless nuggets. It was chickpeas, carrots, egg, gluten free panko bread crumbs, and a bunch of seasonings. When they were done in the air fryer, they looked like chicken nuggets and tasted great. They were even better with a sauce. -
REFLECTION QUESTIONHealth & EquityWhat was it like to practice mindfulness? If this is a practice for you already, what was something new you understood in practicing during Earth Month?
Laura Chesshir 4/03/2023 4:40 PMI definitely had times when a family member would come up and ask me a question, but I have been midnfully finding vegan recipies or figuring out how I can spend more time outside. I will be looking into pasttimes where that I can participate in on my back patio or even sitting in the grass in the backyard. -

Now I am trying to see things in a different light and understand that I can do my best at work, but I need to focus on mental health and family. If I need to walk away from a project for 15 minutes instead of plowing through and finishing it as quick as possible, I will. -

Laura Chesshir 4/03/2023 10:32 AMI love mending my own clothing. I was also able to fix a torn couch cover for someone. I am constantly using pre-made clothing that would end up in a dump for something else. Trying to see a product as fabric and how it can be re-used is an amazing skill and something that I am trying to do over and over again.
