One kilogram of beef and cheese emits 71kg and 24kg of greenhouse gasses, while 1kg of rice, grains, and legumes emits between 2-4kg. Fruits, vegetables, and nuts emit less than 1kg per 1kg. I will reduce my climate impact by enjoying 3 meatless meals and/or 4 vegan meals each day this week.

    Bonus for scrap broth: use up-cycled jars to save the broth in (stays good in fridge for at least 2 weeks in my experience) or freeze the broth in ice tray to pop in dishes for sautéing

    Fun tip: I save all veggie and herb scraps (ends, too soft to eat, etc) in a bag in the freezer. When the bag is full I slow cook it with filtered water for 14 hours. Then strain out the solids and have amazingly richly flavored, chemical free, salt free broth. I put the solids in compost and they are great for speeding up compost since they’re already in the process of breaking down from the slow cook.

    So important to plan your gardens to support local pollinators and also naturally pest reducing. No pesticides! UW Madison holds great virtual free webinars to teach about this. You can find them on social media.

    We try to live low impact in our house. No meat or dairy, CSA or local co-op and growing our own vegetables for most of our food. We compost and recycle all we can and use reusable shopping totes and make purchase choices based on what they are wrapped in. We also do rainwater collection for the garden. There’s always more to learn though so I will be interested to learn more about what else we can do.
