How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

I peeled carrots and celery for a salad. I save the peels of vegetables in my freezer then make vegetable broth after I have accumulated several parts. This often includes onions, celery, carrots and any vegetables that may be beginning to dehydrate in the fridge.
