REFLECTION QUESTIONHealth & EquityWhat are the implications for a culture that spends most of its time inside and on screens?
Carol Kowalski 4/03/2023 9:22 AMwhat a pretty day to be outside - cloudy yet bursts of blue sky .... I went for a walk to the local library and picked out a plant from their plant sale.... then walked to the post office to get the mail from Saturday and then home. -
REFLECTION QUESTIONClimate & EcosystemsHow is planting trees good for your mental, physical, and spiritual health?
Carol Kowalski 4/03/2023 9:21 AMI planted a blueberry bush next to my one blueberry mature bush so the bees can cross pollinate :) -
REFLECTION QUESTIONBasic Needs & SecurityWhat was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?
Carol Kowalski 4/03/2023 9:18 AMOur family is using this Eco Challenge to move toward "clean eating" Yesterday we did meal prep for the week - one of my favorites is the fresh dill black garlic veggie (red pepper, tomatoe, Persian cucumber and celery) chopped salad. I was going to use apple cider vinegar with the mother for the dressing with some olive oil but the balsamic glaze was the winner!
