    They are going quite well. As I focus on living a more balanced and healthy life I have been able to reflect on the changes that I can make which will allow for a better tomorrow.

    How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

    I keep all my veggie scraps in a bowl, after a few days I will boil them down to make broth. I like to purchase food in reusable containers and work to use a few dishes as possible to help with water waste.

    When I take time out of my day to meditate and reflect on the thoughts and feelings that arise in my mind it allows me to detach and observe. By observing from a distance I can allow myself to live in the present moment.

    I turn off the faucet while brushing my teeth. I also had maintenance check for leaking plumbing and found a toilet that needed a part replaced. After the part was replaced I noticed a lower water bill.

    The recipe that I tried was lentil soup with sweet potatoes. It was lovely! I put it over brown rice.

    Since becoming Vegan I have noticed a lot of my actions are centered around sustainability. I look at where I buy, the ingredients, and how they will affect the world around me. While one person can not change the world, one action can inspire another action which can lead to big changes.
