REFLECTION QUESTIONBasic Needs & SecurityHow did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?
Carrie Murphy 4/03/2023 4:34 PMAt the beginning of the week after marketing I chop and prepare all of my vegetables and package into portioned salads an per chopped add ins for stir frys and meals makes dinner prep easy. I save all discarded root bulbs, skins tops, ends and throw them into the crock pot with herbs, water and let them simmer on low. Makes a great vegetable broth for vegetable soup where I put any leftover chopped veg I didn't get to during the week.
