    We made vegetarian potstickers that were absolutely delicious for lunch. And then had a nice kale salad with sunflower seeds, cabbage, and toothpick carrots with a sweet onion dressing for dinner.

    It's nice that we won't have to pay as close attention to the thermostat this year. Our energy bills almost doubled throughout the last year and I hope this helps ease that financial burden.

    It was really not as difficult as I was expecting. I am grateful we were able to do this as a family and hope to do it again within the next few weeks!
