I would like to cook more at home using fresh locally sourced ingredients as much as possible. Anytime I cook at home I will either prove a short summary of the cooking process, the recipe, or where I was able to source the ingredients for said dish. I wanted to choose this as a goal to not only be more healthy but also to help the local market and even potentially save money.

REFLECTION QUESTIONBasic Needs & SecurityWhat did you watch, and what was the most important thing you learned in the documentaries you watched? How does what you learned connect to your understanding of climate change and Earth Month?
Olivia Padula 4/20/2023 6:11 PMThe documentary on Netflix pertaining to food/water/security that I watched is called "What the Health". The documentary goes on to depict the relationship between diet and disease and how billion dollar cooperations, such as healthcare (big pharma) and food industries, make more money the more bad food we consume and the more sick we become. It goes on to demonstrates multiple ways one can break the never ending cycle we've been conditioned into, wether its by something as small as how eating more free range and organically to going completely vegetarian/vegan and adopting permanent and sustainable lifestyles choices bettering not only yourself but the planet as well. -
Olivia Padula 4/19/2023 6:01 AMToday for my meal at home using local ingredients, I decided to make protein baked chocolate chip oats!
Ingredients
- 1/3 cup Quebec rolled oats
- 1/2 banana
- 1 scoop of vanilla whey protein powder
- 1/4 cup almond milk
- 1/2 tablespoon sugar free syrup
- 1 teaspoon baking powder
- sprinkle of salt
- handful chocolate chips
Instructions
1. Blend oats, protein powder, & baking powder in a blender and transfer into a bowl
2. Mash banana, until soft, in a separate bowl
3. Incorporate & Mix the almond milk, SF syrup, & dry mixture with the banana
4. Add in chocolate chip
5. Place mixture into oven safe ramekins and bake for 20-24min at 350 degrees
(poke a hole in the centre with a toothpick ensuring it comes out clean = fully cooked)-

Olivia Padula 4/18/2023 4:38 PMI think that there are both positive and negative implications upon a culture that spends most of its tie inside and on a screen A few of the greater negative implications I can think of is perhaps increased social anxiety, isolation, and even depression in individuals. Some of the positive implications are increased productivity, problem solving & creative skills and improved fine motor skills. -
Olivia Padula 4/18/2023 4:28 PMFor today's recipe with local avocados and eggs, I made scrambled eggs and avocado toast!
Ingredients:
- 2 medium Quebec eggs
- 1/4 cup egg whites
- 2 tablespoons milk
- 2 pieces rye bread toast
- 1 medium Quebec avocado
- 1/4 red onion (diced)
- garlic & onion powder
- chili flakes
- parsley
- salt & pepper
Instructions:
1. Mix 2 eggs, egg whites, milk and spices in a bowl until combined
2. Add mixture to a medium sized pan on med-high heat
3. Allow eggs to cook thoroughly by waiting 3 minutes, then carefully stirring and folding eggs over repeatedly
4. Next, grab 2 eye bread pieces and place them in the toaster or, cook them on a pan with butter until golden brown.
5. Slice the avocado, peel and begin mashing it along with, adding in the spices in a separate bowl
6. Dice the red onion and mix it in with the avocado
7. Plate the eggs and add avocado mixture on top of toast

Olivia Padula 4/16/2023 1:35 PMToday was fairly easy for me to be mindful, as I took the time to write in my gratitude journal outside as there was beautiful sunny weather. Although, it is not always so simple to be mindful especially when haing a bad day.
