One kilogram of beef and cheese emits 71kg and 24kg of greenhouse gasses, while 1kg of rice, grains, and legumes emits between 2-4kg. Fruits, vegetables, and nuts emit less than 1kg per 1kg. I will reduce my climate impact by enjoying 3 meatless meals and/or 3 vegan meals each day this week.

    I made a vegan chocolate mug cake. Yum! Very easy to make. 28 g of Almond Flour, 16 g of Oat Flour, 4 g of Corn Starch, 1 tsp of Baking Powder, 12 g of Cocoa Powder, 25 g of Maple Syrup and 65 g of water.
    Mix the dry ingredients first until well combined, add the wet ingredients, stir in and pour into a mug. Microwave for 2min 15 sec. Let stand inside the microwave for 5 min. Enjoy warm!

    I love making lentil stew and it's so easy. I just put a can of diced tomatoes, my favorite seasonings (smoked paprica, coriander, garlic, black peper), 2 3/4 cups of vegetable broth, 280g of uncooked green lentils, 1 tbsp liquid smoke, 1 tbsp maple syrup. All of this in my Instant Pot, mixed well. Cook on Pressure for 8 min and let stay in the pot for 10-15 min after they are done. This is so easy and gives me 4-5 meals. I modified the recipe from one I found on The Vegan 8 website.

      Sounds delicious! When I have vegetarian guests my go-to is little pizzas made with Naan covered with some bruschetta, fresh mozzarella, & fresh basil from my herb garden - served with a baby spinach salad that has blueberries, mandarin oranges, & champagne dressing (I know fruit in a salad may sound strange but trust me - my FAV salad ever)
