    Even though the temperatures have dropped some, I'm still enjoying being outside and taking walks in new areas

    I have been able to maintain my mindfulness practice, get outside, and continue to find creative ways to repurpose things around my home. I was out to eat and asked the server to limit how many napkins she offered so they would not get wasted. I emphasized that it's Earth Month and that it ties in with sustainable practices. She agreed and said she'd rather a customer ask for me than offer more than they actually needed.

    What was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?

    Browned Mushrooms, in vegan butter with garlic and shallots and plum tomatoes. I made this today for lunch, once cooked put this on a slice of 7 grain bread, taste great and doesnt leave you craving meat.

    How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

    I made smash potatoes and used the potato water to cook some shrimp. Combining the two with a salad for a great dinner.

    I wasn’t able to spend much time outside over the weekend due to an immersive class. I was able to get outside for a few minutes each day
